Creapes are really good for lunch or desserd.
Sift the flour, salt, sugar into a bowl, then add the egg and milk a little at a time and gradually beat to a smmoth batter. Melt a little butter in a small 18-20 frying pan and add sufficient batter just to cover the bottom very thinly. Cook for 1-2 minutes or until the underside is slightly brown, then turn over and fry for a while.
Transfer to a plate and fry another crepes in the same way. Cover to keep warm. Four each pancake into four.
To make the sauce: put the sugar in a frying pan and heat gently until it melts and begins to brown. Add the butter and orange juice and heat until the caramel dissolves. Put the folded pancakes on a frying pan, lightly fry for a minute, shaking the pan. If you want add the brandy into a frying pan, mix well. Place the crepes on the plates and pour over with sauce, garnished with orange slices.
