My idea of tasty breafast.
Heat the oil in a small frying pan. Wash the courgette an cutt into thin slices. Add the courgette and cook gently until just tender. Spread with herbs and season with salt and black pepper.
Beat the eggs add salt and black pepper and pour over the courgette. Put the prosciutto and some of shredded fresk basil on the top.
Cook over a medium heat for about 5-7 minutes. As the eggs set, then put the frying pan under a hot grill, very close from the heat. and grill for 1-2 minutes or until the top is a light golden brown.
Cut the courgette frittata into wedges, and lightly garnish with extra shredded fresh basil.
For vegetarians – skip the prosciutto, it will be also delicious.
