Deliciously simple using everyday ingredients.
Place the eggs, vanilla extract, salt, sugar in a bowl and beat until fluffy. In a frying pan melt the butter, add raisins and fruits goi. Fry them for a 10 second. Take everthing out from the frying pan and leave to cool.
Add the flour, milk, melted butter and gradually whisk in the egg mixture to make a smooth batter the consistency of single cream.
Heat an non-stick frying pan. Add a little of the oil and pour in the batter, swirling the pan to coat. Cook until set and golden, then turn and cook until golden on the otherside. Slide out of the pan and keep warm. Then repeat to make more pancakes.
Dust then with icing sugar and decorate with your favorite jam.
