Pork belly is fantastic cut of meat and it’s easy to cook. Preheat the oven to 160C.
Rub the salt, garlic, marjoram, chilli into the skin of the pork belly, chill for 1 hours.
Pour the oli into a ovenproof dish and place the meat, skin-side up, on the top.
Roast for 2 hours, increase the temperature to 170 and bake another hour then remove from the oven. Preheat the grill to a high heat. Put the pork under the grill so the shin can crisp up , keep on eye on it as it can burn.
Serve with potatoes.
