Red curry is hot and flavourful and traditional to Thailand.
Heat the oil in a wok. stir fry the garlic, onion, ginger for a 3 minutes. Add the chicken breast, curry paste, lemon grass, chillies, lime leaves and stir-fry for 3 minutes.
Pour in the cocout milk,fish sauce stir well and fry for another a few minutes.
Serve each portion garnished with a corander and basil leaves.
Serve with rice or Indian bread.
