It is a very good and healthy recipe. I love lentils 🙂
Het 3 tbsp of oil in a large ovenproof casserole pan, season the chicken with salt and black pepper the fry until browned. Remove the chicken from the pan and put aside. Fry the chopped onion until tender. Meanwhile pop the ginger, garlic, chilli into a small bowl and crush with a blender to a paste. Bash the cardamon pods with the end of a rolling pin to split the husks, then remove the seeds and add to the pan with the remaining spices and aromatics.
Add the chopped tomatoes, stock, lentils, sugar and vinegar to the pan, then add the chicken. Bring to the boil. Cover and place in the oven to cook for 40-50 minuter or until tender. Stir in the yoghurt, check the seasoning and serve topped with coriander, you can serve with a bowl of basmati rice.
