I love such breakfast. That omelette is big enough for two people.
Put the butter and half of the sugar in a large frying pan and fry until butter melted. Put the apple in a frying pan, spring with the cinnamon and cook over a low heat until the fruit is softened, stiring continuously.
In the minetime beat the egg ypolks with the soured cream untill fluffy. Wisk egg whites until stiff and carefully fold into the yolks and mix very gently.
Pour the eggs miksture into a frying pan. Cook over a low heat until the mixture has set. Then sprinkle with the remaining sugar and brown uder a hot grill.
Serve warm with soured cream.
