I learned to eat these tastes as I came to England. I love them now
Heat the pan with the oli. Add the chopped onion and fry until soft. Then add the chicken, chopped garlic, chillies, smoked paprika, cury paste, tumeric, lemon grass, mushrooms cuted into sliced. Mix and fry so long as the chicken loses color of raw.
Pour in tomatoes, chicken stock. Add the bamboo, corn and cook 10 minutes. Season with salt to taste.
Pour in coconut milk, lemon juice, peas, prawns and cook another 3-5 minutes. If a soup is to thick add some water.
Spring the soup with chopped coriander or parsley.
