Sift the flour, baking powder and salt into a big bowl. Add the butter, lard, with your fingertips, rub them into the flour mixture until the mixture resembles fine breadcrumbs. Then add the sugar, milk, raisins and goji into the butter mixture to enable you gather the mixture into a ball of soft dough.
Transfer to a lightly surface and roll out to about 5mm/ thick. With a cutter, cut into rounds, gathering up the offcuts and re-rolling to make more.
Heat a frying pan and rub the butter and cook the scones in batches for 3-4 minutes on each side until well browned.
Lift off and keep warm until all are cooked.
