Butter chicken is one of the most popular chicken dishes.
Put the yogurt into a bowl and add the ground almonds, chilli, crushed bay leaves, cinnamon, garam masala, crushed cardamom pods, grated ginger, smoked paprika powder, crushed garlic. Mix all well. Cut the chicken meat into cubed, then add into a bowl with yogurt mixture. Mix thoroughly.
Melt together the butter and oil in a wok. Add the onion and fry till soft. Add the chicken mixture an stir for 5 minutes. Pour in tomatoes and stir-fry for another 10 minutes. Season to taste if needed.
Sprinkle over with coriander.
