This is my one of the best cakes so I have even eaten in England so far. I serve it every time when my guest form Poland are here.

sticky toffee cake

Toffee souce – Combine the sugar, cream, butter in a small pan. Stir until the butter melts and the sugar dissolves. Bring to the boil, reduce the heat and simmer for 2 minutes. Set aside.

To prepare the date – Pitted and chopped dates put into a small pan, pour the water in. Bring to the boil and remove from the heat. Let to cool slightly, then add the bicarbonate of soda, stir. Set aside to cool to room temperature.

Batter – Using electric beaters, beat the butter, sugar, vanilla extract until light and creamy. Add the eggs gradually, beating thoroughly after each additon. Add the flour and mix well to combine. Add the dates with liquid and stir good.

Preheat the oven to 180 C. line the base of the cake tin 20×25 cm with baking paper and poor the butter in.

Bake for 50 minutes. Leave in the tin for 10 minutes before turning out.

To serve – pour the warm toffee souce over of each slices of pudding and serve with extra cream
