Christmas time is a time for baking cookies. Every year I bake a lot of different cookies. I love it 🙂
Preheat the oven to 170 C
Whole almonds mix in the blender until almost powder. Beat the egg whites, add in the sugar 1 tbsp at a time, beating well after each addition, and continue beating until the whites are glossy and stiff.
Add the almonds mixture and gently stir until just blended.
Spoon the mixture into a large piping bag with a plain 1 cm/ 1/2 in nozzle. Pipe 4 cm/ 1 1/2 in rounds, 2,5 cm/ 1 in apart, on the baking sheet. Press a flaked almond into the centre of each. Sprinkle with the almond flackes on the top of each.
Bake the cookies for about 15 minutes or until they appear crisp. Remove the baking sheet to a wire rack to cool.
