I really like cauliflower soup, but I decided to do it differently, I like to change flavors , was great.
Pour the water, vegetable stock into a pan, add the potato, buttenut squash, season with salt and black pepper to taste. Bring to boil, and cook for 7-10 minutes until vegetables are tender. Using an electric blender mix the soup until smooth, add the cauliflover, carrots, water to cover the vegetables. Cook in a low heat for 10 minutes, then add the curry paste and cream and simmer for a few minutes. Season if needed.
Take the soup out of the heat and add the chopped fresh parsley. Pour the soup into a warm bowl and serve.
