I made this dish for my children, ther were last weekend to visit me. I made Polish and English meals as well.
Heat the oil in a deep frying pan, then gently fry the paste, onion, lemon gras,cardamon pods, mustard seeds for 3 minutes until fragrant. Stir in the squash for a few minute, then pour in the stock and coconut. Season with salt and pepper if needed. Bring to the simmer and cook for 20 minutes. Then pour it in a big bowl and blend until smooth. Pour it back into the frying pan add the sweet corn and cook for a 10 minutes. At the and add the prawns and drained chickpeas,cook for 2-3 minutes, Serve with rice or pasta, sprinkled with coriander
